The Chinese Culinary Experience in India

From the all-time favorite Chilli Chicken to "drums of heaven” and "Chicken Memo”, Indian Chinese cuisine is a brilliant fusion of Chinese culinary techniques and Indian sensibilities.

Developed by a small Chinese community in Kolkata, largely comprising of Hakka immigrants from Guangdong and Fujian provinces of China, it took over a century for Indo-Chinese food to achieve mainstream status.

Sauces and Spices : The Chinese Difference

Chinese cooking is rooted in the use of a few sauces and spices.

Soy sauce is considered a mainstay of Chinese cooking, by experts. This sauce is available in dark and light varieties, and is used with chicken, lamb, seafood, and vegetables. The sweet and spicy Hoisin sauce is another important component of Chinese cooking. It is used liberally in stir fries, to marinate meat and fish, or as a dipping sauce.

Black bean and garlic sauce is another popular sauce used for its strong flavor, and is commonly used to add zing to stir fried Chinese food.

Typical Chinese Fare

A typical Chinese Lunch starts off with soup and appetizers. Increasingly, young people, especially millennials, prefer seafood, including prawns.

The main course is usually a selection of noodles, rice, poultry, seafood, lamb, and vegitables. Choice of noodlesinclude Chicken Chowmein, Chilly Chowmein,

Chicken LeefooChowmein, Chicken Singapore Chowmein, Chicken Cantonese Chowmein, Chicken American Chopsuey, Chicken Chinese Chopsuey, and Chicken Cantonese Chopsuey. Among rice dishes, Chicken Fried Rice, Szechuan Fried Rice, Chicken Leefoo Fried Rice, and Prawns Fried Rice are popular.

Among poultry dishes, Chilli Chicken is by far the top favorite, including Diced Chilli Chicken, and Fried Chilli Chicken. Chicken Manchurian is a close second, followed by Ginger Chicken, Garlic Chicken, Szechuan Chicken, Shangai Chicken, and Hunan Chicken.

Ice cream is quite popular as a dessert, probably because of the hot and spicy nature of popular Indo-Chinese recipes.

Chicken Manchurian

  • 500 gm chicken mince
  • 4 eggs, beaten
  • 1.5 cup refined flour
  • 1 tsp garlic paste
  • 1 tsp ginger paste
  • Oil for deep frying
  • 2 Tbsp oil
  • 2 tsp finely chopped garlic
  • 1 cup finely chopped onions
  • 2 large capsicum-chopped fine

Sauce :

  • 6 Tbsp corn flour-blended
  • In 1 cup of water
  • 4 Tbsp vinegar
  • 4 tsp soya sauce
  • 1 cup tomato puree
  • 4 Tbsp chopped celery
  • 4 tsp salt
  • 4 cups water
  • Mix the chicken
  • Beaten eggs
  • Garlic and ginger paste
  • Flour and enough water so as to have a thick batter. Set aside for 10 minutes.
  • Heat the oil. Fry the batter into small balls till they are golden brown.
  • Heat 2 Tbsp of oil, and stir-fry the garlic and onion in high.
  • Add capsicum and stir.
  • Add the sauce ingredients and simmer.
  • Add the fried balls and serve hot.
